I think a lot of folks overlook models like XLNet and RoBERTa. They’re pretty robust for understanding language nuances.
I've been messing with T5 from Google. It’s kinda complex but really flexible across multiple NLP tasks.
For speech recognition and synthesis, models like Whisper and Tacotron are pretty rad. Not many people talk about those but they're game changers.
