Finding AI Transcription Services with Data Centers in Europe

Anyone tried DeepTranscribe? Heard their platform is solid and they have EU servers, but wasn’t sure if that’s actually true.

I’m also curious about open source options that can be self-hosted in EU data centers to keep everything fully local.
